Barefoot Contessa's Shrimp Scampi





I made this recipe a few nights ago and it was so good! Be easy on the lemon though because if you are like me I don't like it too tangy:) Also you could use the same recipe with fresh scallops too. This recipe smells so good... hubbs was happy to come home to a yummy dinner.


Ingredients
Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes
Directions
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

So.....you either love the RHW reality series or you completely hate it... I haven't found many people in between. Anyways I also think the same thing goes for Bethenny Frankel, the always sarcastic, slightly anxiety ridden single (?) Jewish darling (maybe not the right word for her?) I personally love her! I think she is such a straight shooter, no bull, funny girl you would love to have as a best girl friend. Plus... does she not have the cutest dog ever? Well, other than my two poodles lol and maybe Pepper or as I call her Pepperita (a friend's dog who seriously should be in a commerical- no I'm serious!)

My first blog!

I'm so excited to say I finally have a blog. I've been browsing a few blogs for awhile now and decided I just have to have one! Now my hubbs as I will affectionately call him will have even more chance to bug me about my other boyfriend- otherwise known as my computer. I have an online business (I sell Spas....yeah...like hot tubs online!) so I'm already on here enough as it is, but I have my routine okay... I wake up in the morning-make my coffee-watch the Today show-catch up on Perez, People.com, and x17online.com. After I have my complete fill of celebrity news I start working lol Now I will have another distraction! Oh well, I have too much on my mind and need to purge my thoughts so I'm thrilled about the Pink Palamino... an ode to my equestrian activities and I also just thought it was cute!
